Die Kat Se Snor Chardonnay 2021

Description

This wine shows typical cooler climate minerality, a lovely lemon curd citrus element and textural weight on the palate. The oak is supportive but never dominant. Bright acidity layered in supple texture and lashings of fruit weight, this wine drinks superbly now and should age well for another 5 years.

The grapes are from under Shaw’s Mountain Pass in the Walker Bay area, 15km from the Atlantic Ocean. Grapes are handpicked and chilled overnight before processing. 100% Whole bunch pressed to stainless steel tank for overnight settling. Racked to older French oak the following day to undergo spontaneous fermentation. MLF in barrel and then left on gross lees for the duration of 10 months. 4 barrels produced. Bottled unfined and unfiltered, while additives are limited to a small addition of sulphur before bottling. Harmless sediment may develop over time.
