This wine was made with texture and food in mind; showing chalky minerality, a bright acid core well supported by flavours of blackcurrant, lime and a touch of reduction. Tight in its youth, it should age well for another 5 years.
The grapes are from the Hemel en Aarde Ridge in the Walker Bay, just 15km from Atlantic Ocean. Grapes are hand picked and chilled overnight before processing. 100% Whole bunch pressed to stainless steel tank for overnight settling. Racked to older French oak the following day to undergo spontaneous fermentation. MLF in barrel and then left on gross lees for the duration of 10 months.
Only 3 x 225L barrels produced. Bottled unfined and unfiltered, while additives are limited to a small addition of sulphur prior to bottling. A harmless sediment may develop over time.
