A careful selection of up to 10 harvests through the same vineyard – choosing the bunches at their peak, naturally fermented in French oak about 50% new and aged for a year in barrel on the lees.
Each year Mother Nature has her very own agenda and our role in winemaking is to accurately capture the complex array of patterns that go into any vintage and to reflect the myriad variables that make each year so unique.
Tasting Note:
From Ken Forrester, the ‘King of Chenin’, the flagship FMC is rich, seductive and utterly sophisticated. Layer upon layer of pineapple, candied lemon, dried apricot, ginger and vanilla, with touches of honey, spice and crème brûlée; effortlessly supported by gentle oak and lovely freshness. This wine is still showing the exuberance and nerviness of youth, and will develop and blossom over the next 4-5 years.
Winemaking:
Natural wild yeast fermentation in new French oak 400 L barrels. Due to repetitive harvesting some botrytis is always present. Maturation on the lees total of 12 months in the barrel.
FOOD SUGGESTIONS
Enjoy with special friends as an exciting aperitif or with spiced dishes, even mild seafood/shellfish or curries. Great with exotic Eastern spiced foods.
