Thelema Cabernet Sauvignon 2017

Description

Two mountain slopes next to Thelema’s neighbour, Tokara, supply the fruit for this impressive Cabernet, which expresses everything that’s good about the 2017 vintage. Dense, sinewy and refreshing, with a youthful core of cassis and dried herbs and underlying minerality. 2022-29  92/100 Tim Atkin MW

Forceful South African Cabernet, full of black cherry, blackcurrant and chocolate on a background of warm, toasty oak, freshened by a breath of mint.

Winemaking

Harvest was carried out by hand. The bunches were de-stalked, and the berries hand sorted before crushing and fermenting in stainless steel tanks. Pump-overs were performed for 6 days before a further maceration of 5 days. After pressing, the wine was then racked to 50% new French oak barrels for malo-lactic fermentation and 20 months of ageing.

Vineyard

Sourced from selected parcels planted between 1998 and 1999 in Hutton soils (decomposed granite) at a density of 3200 vines per ha. Vineyard practices include vertical hedge trellising, pruning to 2 bud spurs every 15cm and supplementary drip irrigation.

Food matching

The intense berry fruit in this wine make it an excellent partner to dishes like roast turkey or try with a fine piece of British beef.
